Cranberry: A berry for all seasons

At LiveSoWell, we just love cranberry, and we declare that this high-antioxidant treat is suitable for consumption all year round, not just during the winter holidays. Cranberries are high in dietary fiber and vitamin C. Plus they provide superior amounts of specific polyphenols shown in studies to protect against bacterial infections in the urinary tract, digestive system, and even in the mouth by discouraging bacteria from sticking to teeth and gums.

The benefits of cranberries can be obtained from the fruit or juice itself, or from cranberry supplements, which are typically concentrated, and therefore easier to take than numerous servings of fruit or juice. The most widely studied cranberry supplement on the market is Cran-Max®, a full spectrum product that contains all the vital parts of the cranberry-the fruit, seeds, skin and juice, and has been proven effective in reducing the occurrence of urinary tract infections.

Below is a delicious cranberry recipe from a reader, Arlene A., from New Jersey. She loves to make this and use it on salads, in yogurt, on top of soy ice cream, and when served hot, as a side dish. Enjoy!

Arlene's Cranberry Sensation (makes enough for the whole family)

Ingredients
1-12oz package fresh cranberries
1/2 cup water
1/2 cup apple juice
1/2 cup orange juice
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup craisins
1/2 cup triple sec
1/2 cup mandarin oranges
1/2 cup chopped pecans

Directions
In medium sauce pan over medium heat dissolve sugar and brown sugar in water/juice mixture. Stir in cranberries and cook until they start pop (about 10 min.) Add craisins, pecans and triple sec. Simmer until it starts to thicken (about 5 min.). Remove from heat and stir in mandarin oranges. Serve warm or chilled.
